It’s really hard to knead the glove film with your hands! It’s better to use Stand Mixer, free your hands, and easily knead the glove film in 15 minutes!
Materials
High-gluten flour 420g
Whole wheat flour 80g
Milk 300 ml
Egg liquid 50g
White sugar 40g
Salt 6g
Dry yeast 6g
Milk powder 20g
Butter 40g
The formula can make two 450g whole-wheat toast.
Procedure
- Add all ingredients except (salt and butter) into the kneading bucket, beat it at low speed for 1 minute until there is no dry powder, turn it to medium speed for 2 minutes, turn it to high speed for 5 minutes, and beat it to the thick film state and add salt and butter. Beat butter and dough at low speed for 2 minutes, turn to medium speed for 2 minutes, turn to high speed for 3 minutes, and then pull out the glove film!
- Take out the beaten dough and put it into a 28-degree environment for the first fermentation, about 60 minutes. The fermented dough is about twice the size. Divide into 6 parts, pat, exhaust, roll into a smooth shape, and relax for 15 minutes. Carry out the first rolling and continue to relax for 15 minutes.
- After the second “roll”, put three groups into a 450g toast box for final fermentation. The temperature is 36-37 ℃, the humidity is 80%, and the fermentation is full to 8 minutes.
- Put it into the fully preheated oven, heat it up and down 180 degrees, and place it in the middle and lower layers for about 45 minutes. (The baking temperature and time should be properly adjusted for different toast molds)
- The key to making good toast is the dough temperature and glove film, so the liquid must be refrigerated before use.
